Blood Orange Loaf Cake

With Valentines Day right around the corner I’m already starting to put together a fun little menu. Even if you’re just celebrating with friends for galentines day, what better way then with a super easy, super delicious, and pink (!) cake! This recipe will steal your heart.

Ingredients

Scale

3/4 cup cake flour

3/4 cup all purpose flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

4 eggs

2 tablespoons blood orange zest

2 tablespoons blood orange juice

1 cup + 2 tablespoons sugar

1 teaspoon vanilla extract

1/4 cup sour cream

1 cup butter, melted and cooled

Glaze:

1 cup powdered sugar

23 tablespoons blood orange juice

Instructions

Preheat your oven to 350 degrees F and grease a loaf pan

In a bowl mix together the cake flour, all purpose flour, baking powder, baking soda, and salt until combined

In another bowl mix together the eggs, blood orange zest, blood orange juice, sugar, sour cream, and melted butter until combined

Add the wet ingredients to the dry and stir to combine but don’t over mix!

Pour the batter into the loaf pan and put into the preheated oven

Bake at 350 degrees for 20 minutes, then reduce the heat to 325 degrees F and bake another 30-35 until a cake tested inserted into the middle comes out clean

Let the loaf cool in the pan for 15 minutes before taking out and letting it cool completely

Once the loaf is cooled make the glaze. In a bowl add the powdered sugar and 1 1/2 tablespoons of the blood orange juice. Mix together completely, adding a little more blood orange juice if it isn’t thin enough. You don’t want the glaze to be so thin that it runs off the delicious cake!
