This classic carrot cake is so simple and easy to make.. full of flavor and love! The perfect Easter dessert. I personally like my carrot cake the classic way, without any pineapple, coconut, or any other fillers that take away from the deliciousness. Sometimes, you don't need a bunch of fancy ingredients for an insanely good cake.

Carrot Cake
  1. 2 1/2 cups all purpose flour
  2. 1 1/4 teaspoons baking powder
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1 1/4 teaspoon ground cinnamon
  6. 1/2 teaspoon ground nutmeg
  7. 1/8 teaspoon ground clove
  8. 1 pound peeled carrots (about 3 packed cups)
  9. 1 1/2 cups granulated sugar
  10. 1/2 cup light brown sugar
  11. 4 large eggs
  12. 1 1/2 cups canola oil
Cream Cheese Frosting
  1. 10 tablespoons unsalted butter, room temperature
  2. 3 cups confectioners' sugar
  3. 1 1/2 teaspoons vanilla extract
  4. 1/4 teaspoon salt
  5. 2 tablespoons sour cream
  6. 1 pound COLD cream cheese ( cut in cubes )
Instructions
  1. Preheat your oven to 350 degrees F and grease three 9 inch cake pans
  2. In a large bowl, mix together the dry ingredients: the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and clove
  3. In another bowl mix together the eggs, granulated sugar, brown sugar, and oil until combined
  4. add the flour mixture to the wet ingredients and mix until combined
  5. Add the shredded carrots and stir together with a spatula until combined
  6. Pour the batter into the greased pans evenly and put them into the oven. Let them cook until a cake tester comes out clean, about 20-25 minutes
  7. Let the cakes cool completely on a wire rack, about 1 hour
  8. In a bowl with an electric mixer mix together the butter and confectioner's sugar
  9. Add the sour cream and vanilla and mix until smooth
  10. Add the cold cream cheese and mix until smooth
  11. Put a layer of cake on your cake plan and spread about 1 cup of frosting evenly before adding another layer
  12. Place the second layer and press down so it sticks together. Add another cup of frosting and spread it evenly
  13. Put on the last layer and spread the rest of the frosting all over the top and the sides evenly
  14. I like to put a few fresh roses on top but you can use whatever kind of garnish you want!
  15. That's it. A delicious and easy classic carrot cake that anyone will love. Enjoy!
