Hearty Beef & Barley Stew
This hearty and easy to make stew will keep you warm all Winter season. This is one of my family's favorites and I know it will be yours too! It's warm, hearty, and full of flavor.

Ingredients
  1. Olive oil
  2. 2 1/2 pounds beef, cut into chunks
  3. 2 tablespoons all purpose flour
  4. 1 tablespoon onion powder
  5. salt
  6. pepper
  7. 2 medium onions, diced
  8. 4 carrots, diced
  9. 3 red potatoes, diced
  10. 8 cloves garlic, minced
  11. 48 oz beef broth
  12. 1- 14 oz can diced tomatoes
  13. 1/2 teaspoon red pepper flakes
  14. 5 sprigs fresh rosemary
  15. 10 sprigs fresh thyme
  16. 1/2 cup barley
Instructions
  1. In a very large heavy bottomed dutch oven pan heat up the olive oil over high heat
  2. In a bowl with the beef add the all purpose flour, onion powder, and a good amount of salt and pepper. Stir everything so that all of the chunks are coated
  3. Working in two batches add the beef and brown on all sides. You don't want to cook the beef, just brown it
  4. Add the browned beef to a plate and set aside. Turn your heat down to medium
  5. Add the chopped onion and let it saute for about 5 minutes, scraping up the browned bits at the bottom
  6. Add the chopped carrots and garlic to the pan and cook another 3 minutes
  7. To the pan add the beef broth, tomatoes, potatoes, red pepper flakes, rosemary, thyme, and browned beef chunks
  8. Let it simmer for 2 hours, stirring often
  9. Add the barley and cook another 20-30 minutes until the barley is cooked through
  10. Once cooked, discard the rosemary and thyme stems, season with salt and pepper to taste, and serve! That's it. The perfect hearty stew for all Winter long.

    About to make this… just letting you know your recipe list says 3 red onions, when I think you meant potatoes. πŸ™ Should have watched the video first, haha…
