St. Patrick’s Day is such a fun holiday. I always make corned beef & cabbage along with green beer (of course) and anything else green. This year I’m going to go more traditional with my menu and make an Irish classic recipe- soda bread! This quick bread doesn’t require any yeast or proofing which saves so much time. It’s delicious with stews or just some Irish butter and jam- yum!
4 cups all purpose flour
2 tablespoons sugar
2 teaspoons baking soda
1 teaspoon salt
6 tablespoons butter, cut into small pieces
1 egg, whisked
1 3/4 cup buttermilk
Preheat your oven to 425 degrees F and liberally grease a cast iron skillet or dutch oven
In a bowl add the flour, sugar, baking soda, and salt. Stir to combine
Add in the pieces of butter and use your fingers to rub the butter and flour together, so no large chunks of butter remain
Create a little well in the center and add in the egg and buttermilk. Mix until JUST combined. Do not overmix!
Dust your hands with flour and put the dough on to the prepared pan. Form into a ball and using a serrated knife cut a big X on the top
Let it bake for 35-40 minutes until a beautiful golden brown
Serve with anything you’d like! It’s delicious.
