Lemon Curd & Blueberry Parfaits

Homemade (delicious) lemon curd might sound very difficult BUT it’s actually incredibly easy! I’m talking, super easy. This Summery zesty dessert recipe uses my favorite flavors for a great make ahead dessert recipe that you’ll crave all Spring and Summer.

Ingredients

Lemon Curd:

Juice of 2 lemons

2 eggs

1 tablespoon sugar

2 tablespoons butter

1 teaspoon vanilla extract

Whipped Cream:

3/4 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Parfaits:

Lady fingers

Fresh blueberries

Instructions

The first thing you want to do is make the delicious homemade curd. In a small saucepan add in the lemon juice, eggs, sugar, and butter. Whisk to combine

Let it come to a simmer and whisk vigorously. The mixture can curdle or scald easily so don’t leave it alone! Keep whisking until the mixture thickens, about 2 minutes. The way to test if it is done is to dip a spoon into it and carefully take your finger and run a line through the back of the spoon. If the line stays separated it is thick enough

Turn off the heat and stir in the vanilla extract

Pour the curd into a bowl and cover with plastic wrap, so that the plastic wrap is touching the curd directly. This helps to prevent a ‘skin’ from forming

Let it cool in the fridge completely

Once cooled it’s time to make the whipped cream. In a bowl with an electric mixer add in the cold heavy cream, powdered sugar, and vanilla extract. Beat until peaks form

Now it’s time to assemble! In 2 glasses (yes, this recipe only makes 2) break up lady finger cookies and add to the bottom to form a layer. To the top of the lady fingers add a scoop of lemon curd, then a layer of fresh blueberries, then a layer of whipped cream. Repeat this step until both glasses are filled

That is it! You can make this recipe ahead of time which is also helpful when entertaining. You might want to triple this recipe because it is SO good.
