A classic BLT holds a special place in my heart. I don’t know why I love them so much but I always have. I wanted to take a classic and put an elevated spin on it. Roasting the cherry tomatoes gives the sandwich a huge pop of flavor that you won’t get enough of. Oh yea, and goat cheese with pesto. Hello.
2 slices sourdough bread, toasted
3 pieces bacon
1/2 pint cherry tomatoes
Olive oil
Salt
Pepper
1 oz goat cheese
1 teaspoon pesto
Arugula
Preheat your oven to 400 degrees F
On a foil lined sheet tray add the bacon making sure the pieces don’t overlap. Put into the oven
On another lined sheet tray add the cherry tomatoes, olive oil, salt, and pepper. Mix together and put in the oven
Let the cherry tomatoes and bacon cook for about 20 minutes, or until both are cooked and slightly browned
In a small bowl combine the goat cheese and pesto. Spread on a slice of the toasted sourdough
On top of the goat cheese add the cooked bacon, roasted cherry tomatoes, and top off with some arugula
Put the other piece of toasted sourdough on the top, cut in half, and devour. This recipe only makes one sandwich so I highly recommend doubling, or tripling because everyone will want one because its SO good.
