Yogurt Spread
- 1/4 cup Greek Yogurt
- 1 clove garlic, grated
- 1 teaspoon lemon zest
- salt, pepper
Sandwich
- 2 slices bread (I like to use sprouted grain Ezekial bread)
- 1/4 cup chopped fresh spinach
- 1/4 cup chopped artichoke hearts
- 1/2 cup shredded Monterey Jack cheese
- Butter
Instructions
- Heat a griddle pan or skillet up on medium high heat. Melt a tablespoon of butter on it
- In a small bowl combine the Greek yogurt, lemon zest, garlic, salt, and pepper
- Spread the mixture on the top of both pieces of bread
- To a piece of bread add the chopped spinach, artichokes, and a liberal amount of shredded cheese
- Add the other slice of bread yogurt side down to the top of the mixture and add to the preheated pan
- Cook on one side until golden brown, about 2-3 minutes. Flip and do the same on the other side
- Serve hot and enjoy!
