Hey boo-tiful… it’s almost Halloween! Are you looking for the most decadent, delicious, creepy, and IMPRESSIVE dessert ever? This is it. Trick or treat yo’self.
Cake:
2 cups all purpose flour
2 cups sugar
3/4 cup good quality unsweetened cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon espresso powder
1 cup milk
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water
Frosting:
1 1/2 cups butter (3 sticks) room temperature
1 cup unsweetened cocoa powder
5 cups confectioner’s sugar
2 teaspoons vanilla extract
1/2 teaspoon espresso powder
Spider Web:
1 1/2 cups mini marshmallows

Preheat your oven to 350 degrees F and grease two 9 inch cake pans
In a large bowl mix together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder until combined
In another bowl mix together the milk, vegetable oil, eggs, and vanilla until combined. Add to the dry ingredients and mix together until combined
Add in the boiling water and mix to combine
Pour the batter evenly into the pans and put into the preheated oven
Bake 30-35 minutes until a cake tester comes out clean
Once cooked through let it cool in the pans for 20 minutes before removing from the pan and cooling completely for at least 1-2 hours
After the cake is cooled it’s time to make the frosting! In a bowl with an electric mixer add the room temperature butter. Whip the butter until light and fluffy
Add in the cocoa powder, vanilla extract, and espresso powder. Mix on medium until completely combined
Add in the powdered sugar and mix until completely combined
Take one of the rounds of cake and put on your cake stand or serving plate. Add a good scoop of frosting and spread evenly. You want at least 3/4 of an inch or an inch layer
Add the other cake round on top and frost the top and sides as well as possible
Now the fun part! In a microwavable bowl add in the marshmallows. Microwave for 20 seconds
Carefully put about a 1/4 cup of the marshmallows in your hand and put your hands together. When you open your hands there will be long strands that form. Add that over the cake
Keep repeating this to create what looks like a spider web! You can add as much or as little as you’d like
After washing your hands add toy spiders to the cake- and that’s it! So fun.
