This chicken salad might be the easiest, healthiest, and most delicious EVER. Just a few ingredients and you have a nutritious chicken salad without the mayo! It’s like chicken salad and guacamole had a delicious baby
1 ripe avocado
Juice from 1/2 a lemon
1 scallion, diced thin
3 tablespoons chopped fresh cilantro
1 chicken breast, shredded ( I like using leftover rotisserie chicken!)
Salt
Pepper
Garlic powder
Bibb Lettuce (optional)
Add the avocado to a bowl and smash with a fork until smooth
To the smashed avocado add the lemon juice, sliced scallion, chopped cilantro, salt, pepper, and garlic powder. Stir to combine
To the avocado mixture add in the shredded chicken and stir to combine
I like to add the delicious avocado to bibb lettuce to make little cups but you can eat it however you’d like! On bread, by itself, or on a bed of greens. Yum!
