Ingredients

Scale

Jam:

3 slices bacon, diced small

1 large sweet onion

5 sprigs thyme, leaves removed

3 tablespoons brown sugar

3 tablespoons balsamic vinegar

1 round brie

Crackers & sliced baguette for serving

Instructions

Preheat your oven to 350 degrees F

In a pan over medium heat add the sliced bacon. Cook until you see the fat rendering, about a minute or two

To the pan add in the sliced onion. Cook the onions, stirring often, for about 10 minutes or until they’re a beautiful golden color. Be careful your pan is not too hot or else they will burn!

Once the onions have caramelized nicely add in the thyme leaves, pinch of salt, brown sugar, and balsamic vinegar. Stir to combine and let it cook until thick and syrupy, about 5 minutes. Set aside (or make ahead of time!) while the brie cooks

Put the brie in an oven proof serving dish and into the preheated oven. Bake until starting to bubble and melt, about 15 minutes

Once out and hot, top with the jam, and serve with crackers and sliced baguette

WARNING: everyone will go NUTS over this.
