Balsamic Roasted Brussels Sprouts

Thanksgiving is NEXT WEEK. How did that happen?! Is anyone else scrambling to figure out what to make? This year might look a little different, but it will still be filled with love and good food. This Thanksgiving- try out my super easy balsamic roasted Brussels sprouts! You can make the recipe for 2 or 20 in no time. Happy Thanksgiving!

Ingredients

Scale

3 cups brussels sprouts, ends trimmed and cut in half

1/2 apple, diced

1/2 shallot, sliced

1 teaspoon chopped fresh rosemary

1/2 teaspoon red pepper flakes

Olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Chopped pecans

Craisins

Instructions

Preheat your oven to 425 degrees F

Add the cut Brussels sprouts, diced apple, and sliced shallot to a sheet tray. Drizzle with olive oil and sprinkle with salt, pepper, rosemary, and red pepper flakes

In a small bowl combine the balsamic and honey until the honey is dissolved

Pour half of the balsamic mixture on the Brussels sprouts 

Toss to combine everything and spread it out evenly. Make sure the sprouts are cut side down

Put into the oven to bake for 25 minutes, making sure to flip the sprouts halfway thorough

Once cooked pour the remaining balsamic mixture on the sprouts and toss

Put into a serving bowl and sprinkle the top with chopped pecans and craisins. Serve hot and enjoy!
