Who doesn’t love a good BLT? Come on!! I know I do. This BLT (if you can even believe it) is better than the original. The lemon thyme mayo adds a pop of freshness that I think every BLT needs. This recipe is so easy and delicious and perfect for a satisfying lunch. The first thing you want to do is cook your bacon. I like to cook my bacon in the oven on sheet trays. It’s easier and it always comes out flat which is good in for a sandwich. I cook my bacon at 400*F for about 20 minutes, or until crispy. You can also fry it! Either way… it’s bacon. You can’t go wrong. Ok, that’s the hardest part. I also like to lightly toast my bread but thats up to you. To make the mayo just add the chopped thyme and lemon zest and stir! Spread some of the mayo on each slice of bread. Add sliced tomato, then the bacon slices, then the leaf lettuce, then the avocado. Add some salt and pepper and top off with another slice of bread! Cut in half and serve! Perfection.
