All of the delicious flavors of a blueberry pie in a healthy breakfast option?! Now thats something to get out of bed for.

Ingredients

1/3 cup rolled oats
1/3 cup milk (or any nut milk you’d like)
1/3 cup plain Greek yogurt
1 teaspoon maple syrup
1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract
Walnuts for topping
Blueberry Topping
1 cup blueberries
1 teaspoon sugar
1 teaspoon water
Instructions
In a jar or bowl mix together the oats, milk, yogurt, maple syrup, cinnamon, and vanilla extract
Stir to combine and let it sit in the refrigerator for a few hours or overnight
In the meantime, in a small pan over medium high heat add the blueberries, water, and sugar
Let them cook until the blueberries burst and a delicious jam form, about 5-7 minutes
Turn off the blueberry mixture and let it come to room temperature
To serve, add a good scoop of the blueberry mixture and some chopped walnuts to the top of the overnight oats and serve! A delicious and hearty breakfast that will be your new favorite
