Cashew, Almond & Coconut Granola

Granola is a pantry staple in my house. It’s such a good on-the-go satisfying snack! This healthy homemade granola is packed with delicious flavors from the cashews, almonds, coconut, and so much more.

Ingredients

4 cups rolled oats

1/2 cup sliced raw almonds

1 cup raw cashews

1 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup melted coconut oil

1/2 cup maple syrup

1 teaspoon vanilla extract

1/2 cup unsweetened shredded coconut

3/4 cup dried cherries

Instructions

Preheat your oven to 350 degrees F

In a bowl mix together the oats, almonds, cashews, salt, cinnamon, melted coconut oil, maple syrup, and vanilla extract until combined

Pour the mixture to a parchment paper lined sheet tray and use your spatula to press it down firmly

Put into the oven to bake 10 minutes

After 10 minutes take the granola out of the oven. Add the coconut to the granola, give it a good mix, and press it down firmly with your spatula again. Bake another 15 minutes 

After it is done baking take the granola out of the oven and let it cool completely before mixing it

Once it has cooled completely add the dried cherries (or raisins/craisins) to the granola. Give it a mix to combine and that’s it!

Store in an airtight container for a delicious homemade treat
