No Bake Chocolate Peanut Butter Energy Bites

A snack that I always have around the house are healthy no bake energy bites! Not only are they delicious and completely guilt free but they’re so easy to make. I actually love to eat these for dessert because they’re that naughty tasting!

Ingredients

Scale

2 tablespoons coconut oil

1/2 cup organic peanut butter (or any other nut butter!)

1/3 cup honey

1/2 teaspoon vanilla extract

1 cup old fashioned oats

1/3 cup unsweetened coconut

1/2 cup ground flaxseed

1 tablespoon chia seeds

3 tablespoons unsweetened cocoa powder

1/4 cup dark chocolate chips, chopped

Pinch salt

1/3 cup sliced almonds crushed up into smaller bits

1/4 cup unsweetened coconut

Instructions

In a pan over medium heat add the coconut oil, peanut butter, honey, and vanilla extract. Let it cook until everything is melted and combined

In a bowl combine the rolled oats, unsweetened coconut, ground flaxseed, chia seeds, cocoa powder, chopped dark chocolate, and salt

Add the wet ingredients to the dry and stir until combined

On a plate combine the remaining unsweetened coconut and almonds

Damper your hands and add a tablespoon of the mixture at a time and roll into a ball. Coat with the coconut almond mixture and set aside

Keep repeating 

You can eat these right away but if you let them sit they will set up nicely. Store in an airtight container for a delicious snack! Yum
