Still looking for an easy (yet extremely delicious) Thanksgiving side dish recipe? This acorn squash is packed with flavor and might be your new go-to Thanksgiving side dish! It’s also easy enough to just make anytime during Fall. Yum!
1 acorn squash
Olive oil
Salt
Pepper
Glaze:
2 cups apple cider
1 tablespoon brown sugar
5 whole black peppercorns
1 cinnamon stick
5 whole cloves
1/4 teaspoon cayenne pepper
Chopped fresh rosemary
Preheat your oven to 400 degrees
Carefully cut the acorn squash in half and remove the seeds. Cut each half in half and put onto a parchment lined sheet tray
Brush the squash flesh with olive oil and sprinkle with salt and pepper. Turn the squash over so the green skin is facing up
Put into the preheated oven and bake for 20 minutes
After 20 minutes, flip the squash to the other side (skin still facing up) so it cooks evenly and browns
While the squash is cooking preheat a saucepan over medium heat
To the pan add in the apple cider, brown sugar, cloves, cinnamon, peppercorns, and cayenne pepper. Let it some up to a simmer and cook, stirring often, until the liquid has reduced and become thick. About 15-20 minutes
Once the acorn squash is cooked put onto your serving platter and drizzle the cider glaze over it
Sprinkle chopped fresh rosemary to the top and serve!
