One of my absolute favorite things in the world to do is wake up on the weekends and make a delicious breakfast. If you’ve read any of my earlier posts you’ll know that I’m obsessed with breakfast. I have a tie for my favorite meal of the day: breakfast… and dessert. I think it might be due to the fact I’m addicted to sugar. Anyways… this is one of my favorite recipes because it can be used for either! Breakfast or dessert. YES! My life is complete. The sour cream keeps this cake extra moist and the maple syrup glaze gives it a little something special.
Cake:
1 1/2 sticks ( 12 tablespoons) unsalted butter, room temperature
1 1/2 cups sugar
3 large eggs
1 1/2 teaspoons pure vanilla extract
1 1/2 cups (16 oz) sour cream
2 1/2 cups cake flour
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
Streusel:
1/4 cup light brown sugar
1/2 cup all purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into pieces
Glaze:
1/2 cup confectioners’ sugar
3 tablespoons real maple syrup
Preheat your oven to 350*F and grease a 10 inch springform pan, cake pan, or bundt cake pan. Whichever you choose. I like to use a springform pan just because it ensures the cake will come out easily
In a bowl cream together with an electric mixer the butter and sugar until smooth
Add the eggs, vanilla, and sour cream. Mix until smooth
To the wet ingredients add the flour, baking powder, baking soda, and salt. Mix all together until just combined and smooth. Put that to the side and make the streusel
In a small bowl combine the brown sugar, flour, cinnamon, and salt. Add the cold butter and with your fingers and pinch the mixture until it forms a crumble
Add half the batter to the pan and even out with a spatula. To the top of the batter add about 3/4 of the streusel in an even layer
Put the remaining half of the batter and once again spread it out evenly. Add the rest of the streusel to the top of the batter and put in the oven
Let cook for one hour or until you stick a knife in the middle and it comes out clean
Take out of the oven and let cool slightly
When it is cooled take out of the pan and put the cake streusel side up on the cake plate you are going to use. Now it’s time to make the glaze
In a small bowl add the powdered sugar and maple syrup. Sitr until the glaze is all mixed together. You might need a little more maple syrup in order to make it runny
Drizzle the glaze with a fork or spoon as you’d like. Slice, and serve! Who says you can’t eat dessert for breakfast?
