Cranberry Apple Cake

Do you ever get tired of pumpkin pie or pecan pie on Thanksgiving? No, me neither. BUT, this is an amazing addition to the classics! It’s so easy to make and has all the flavor of the holidays in it. Happy Thanksgiving!

Ingredients

12 oz fresh cranberries

1 apple, peeled and sliced

Zest from 1 orange

Juice from 1 orange

1/4 cup light brown sugar

1 teaspoon cinnamon

1 teaspoon vanilla extract

2 large eggs

1/2 cup sugar

1/4 pound unsalted butter, melted and cooled

1 teaspoon vanilla extract

1/4 cup sour cream

1 cup all purpose flour

1/4 teaspoon salt

1 tablespoon + 1/4 teaspoon cinnamon

Instructions

Preheat your oven to 350 degrees F

In a bowl add the cranberries, sliced apples, orange zest, orange juice, light brown sugar, cinnamon, and vanilla extract. Stir to combine and pour into a 10 inch pie pan

In another bowl whisk together the eggs, sugar, melted butter, vanilla extract, and sour cream until combined

To the mixture add in the flour and salt until combined and pour the batter over the apples and cranberries making sure to spread it over the top

In a little bowl combine the sugar and cinnamon and sprinkle over the top of the batter

Put into the preheated oven. Let it cook for 45-55 minutes depending on your oven. Check it at 45 minutes! 

Let it cool slightly before serving with ice cream or whipped cream. Enjoy!
