Ingredients

Ricotta Cookies:

1 stick (1/2 cup) butter

1 cup sugar

1 cup whole milk ricotta

1 egg

1 teaspoon vanilla extract

2 cups all purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

Frosting:

1 1/2 cups powdered sugar

2 tablespoons butter, room temperature

1 1/22 tablespoons milk

1/4 teaspoon almond extract

Red and Green Sprinkles for decorating- optional

Instructions

Preheat your oven to 350 degrees F

In a bowl with an electric mixer, cream together the butter and sugar 

To the mixture add in the ricotta, egg, and vanilla extract. Beat until completely combined

To the bowl add in the flour, baking soda, and salt. Mix until just combined

On a parchment paper lined sheet tray, add the dough a spoonful at a time making sure to leave about a 1/2 inch in between

Put them into the preheated oven and bake for 10-12 minutes

Once cooked through, take them out and put them on a baking rack to let them cool while you make the frosting

In a bowl with an electric mixer add the powered sugar, softened butter, almond extract, and milk. Beat until smooth

Frost each cookie, sprinkle with red and green sprinkles, and devour! Trust me, these babies won’t last long
