Kohlrabi & Apple Slaw

Have you ever heard of kohlrabi before? This year I decided to grow it in my garden! I had no clue what it would taste like but turns out- it’s delicious! This easy to make kohlrabi slaw is packed with flavor from the apple, chili, cilantro, and lime vinaigrette. It’s the perfect light side dish for Summer.

Ingredients

1 purple (or green) kohlrabi, leaves removed, sliced, and cut into matchsticks

1 apple, sliced and then cut into matchsticks

1 small red chili pepper, seeds and ribs removed, sliced thin

1/4 red onion, sliced thin

1/2 cup chopped fresh cilantro

Vinaigrette:

1 clove garlic minced

Juice of 2 limes

1 teaspoon Dijon mustard

1 teaspoon honey

Salt

Pepper

1/4 cup grapeseed oil

Instructions

Take the kohlrabi and cut off all of the leaves and stems. Thinly slice the kohlrabi and set the slices on top of each other. Slice the stacks to create thin matchsticks (watch the video for help). Cut and slice the apple the same way

In a bowl add the kohlrabi, apple, chili pepper, thinly sliced onion, and chopped fresh cilantro

In another bowl add the minced garlic clove, lime juice, Dijon mustard, honey, salt, and pepper. Whisk to combine and drizzle in the grapeseed oil

Add the vinaigrette to the slaw and mix to combine. Let the slaw sit at least 30 minutes and serve cold for a DELICIOUS side dish for Summer!
