Not only are these decadent brownies over the top amazing on their own but then you add in the mint cheesecake swirl and it puts it over the edge. You won’t even BELIEVE how good these things are and the best part is that they’re easy to make! They’re the perfect treat year-round but I’m making them for St. Patrick’s Day so I’m adding a little green food coloring. Everyone will go crazy for this recipe.

Ingredients

Scale

Brownies

1 stick (1/2 cup) salted butter
8 ounces semi sweet chocolate
1 1/4 cup sugar
3 large eggs
1 teaspoon vanilla extract
3/4 cup all purpose flour
1/4 teaspoon salt

Mint Cheesecake Swirl

8 oz cream cheese, room temperature
1/4 cup sugar
1 egg yolk
1/2 teaspoon peppermint extract
23 drops green food coloring
2/3 cup mini chocolate chips

Instructions

Preheat your oven to 350 degrees F
In a medium saucepan over medium heat melt the butter and chocolate. Make sure to stir constantly so that the chocolate doesn’t burn
Once melted turn off the heat and set the chocolate aside to cool until room temperature, about 10 minutes or so
In a bowl whisk together the eggs, sugar, and vanilla until combined. Add in the melted chocolate and stir again
To the mixture add in the flour and salt and gently fold them in until completely combined
Line the bottom and sides of an 11 x 7 inch baking pan with aluminum foil and then spray with non stick cooking spray
Add all of the brownie mixture except 1/4 cup, spread evenly, and set aside
In another bowl with an electric mixer beat together the softened cream cheese, sugar, egg yolk, and peppermint extract until smooth
Add in 2 drops of green food coloring and mix well. If you want it more green than a mint green you can keep adding 1 drop of the food coloring until your desired green. Or you can omit this step!
Mix in the mini chocolate chips until combined
Dollop spoonfuls of the cheesecake mixture to the top and then add the remaining 1/4 cup of the brownie mixture over that
Using a knife run through the layers, creating a swirl pattern
Put the brownies into the oven and bake for 30-35 minutes or until a toothpick comes out clean. Take them out and let them cool before serving
There you have the most decadent brownies of all time. Enjoy!
