Strawberry Lemon Buttermilk Bread

Spring means strawberries! They’re incredible this time of year and I love to take full advantage of them. What better way to start the weekend then with this super easy and incredibly delicious strawberry lemon buttermilk bread recipe. Its moist, flavorful, and the perfect Spring breakfast recipe.

Ingredients

Bread:

2 cups all purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

3/4 cup sugar

1 cup buttermilk

1/3 cup vegetable oil

Zest of 1 lemon

1 teaspoon vanilla extract

1 egg

2 cups chopped fresh strawberries

1 tablespoon flour

Glaze:

1 cup powdered sugar

1 teaspoon heavy cream

1 teaspoon fresh lemon juice

1/2 teaspoon vanilla extract

Instructions

Preheat your oven to 350 degrees F

In a bowl combine the all purpose flour, baking soda, salt, and sugar

In another bowl combine the buttermilk, vegetable oil, lemon zest, vanilla extract, and egg

Add the wet ingredients to the dry and stir to combine

In a bowl add the chopped fresh strawberries, putting a few to the side, and toss with the flour

Add the strawberries coated in the flour to the batter and stir to combine

Grease a loaf pan and add the batter to the pan. Add the remaining strawberries to the top slightly pushing them in

Put it into the preheated oven and bake 55-60 minutes or until a cake tested inserted into the middle comes out clean

Once cooked let it cool slightly before turning out and letting it cool on a rack

Once cooled it’s time to make the glaze. In a bowl add the powdered sugar, cream, lemon juice, and vanilla extract. Stir to combine and if you need more liquid add more lemon juice or if it is too runny add more of the powdered sugar

Drizzle the top of the loaf with glaze, slice, and serve!
