Strawberry & Quinoa Tabbouleh

This refreshing Summertime salad is a twist on a classic! It is tasty enough as a vegetarian entree or top it off with grilled chicken for a hearty Summer dinner! I had a big bowl of it in my fridge and devoured it two days straight!

Ingredients

Scale

1 cup quinoa

2 cups water

1/2 seedless cucumber, cut in half and sliced thin

1 pint fresh strawberries, hulled and sliced

4 scallions, thinly sliced (white and green parts!)

3/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1 package crumbled feta

2 cloves garlic

Zest of 1 lemon

Juice of 1 lemon

1 tablespoon red wine vinegar

Salt

Pepper

1 tablespoon Grapeseed oil

Instructions

The first thing you want to do is cook your quinoa according to package directions. Once cooked let it cool completely 

In a bowl add the quinoa, sliced cucumber, sliced strawberries, scallions, chopped fresh parsley, chopped fresh mint, and crumbled feta

In a small bowl make the vinaigrette by adding the minced garlic, lemon zest, lemon juice, red wine vinegar, salt pepper, and grapeseed oil

Whisk to combine and add to the quinoa. Toss everything to let it coat completely

That’s it! The perfect Spring or Summer side or main- it’s so fresh and flavorful
