Sundried Tomato & Goat Cheese Phyllo Cups

Can you believe it is 2021 this WEEK?! I know I can’t. I’m scrambling to figure out some easy and last minute appetizers to ring in in the New Year and this is one of the easiest. Its packed with so much flavor and takes no time at all to whip up. Plus- I usually have all of the ingredients on hand! Happy New Year everyone! Lets make 2021 the best (we need it).

Ingredients

Scale

1 package phyllo cups

2 oz goat cheese, room temperature

1/3 cup Greek yogurt

2 tablespoons pesto

2 tablespoons sundried tomatoes, chopped thin

5 basil leaves, finely chopped

1 teaspoon finely chopped rosemary

Salt

Pepper

Toasted pine nuts

Chopped basil

Instructions

Preheat your oven to 325 degrees F and put the phyllo cups on a sheet tray (take out of the plastic)

In a bowl combine the goat cheese, greek yogurt, pesto, sundried tomatoes, chopped basil, and rosemary until combined

Spoon the mixture into the phyllo cups and put into the preheated oven to bake for 15 minutes until warmed through

Once cooked I like to top them with more chopped sundried tomatoes, toasted pine nuts, a little pesto, and some fresh chopped basil. Yum!
