Tomato Toast with Herbed Ricotta

OK- this recipe is SO easy I almost didn’t share it. BUT it’s sooooo good. Fresh, late Summer tomatoes are the star in this recipe and I promise you this will blow you away.

Ingredients

Scale

1 slice sourdough bread

1 garlic clove

1/3 cup ricotta cheese

1/4 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon lemon zest

1 teaspoon chopped fresh parsley

1 teaspoon chopped fresh rosemary

1 teaspoon chopped fresh basil

1 teaspoon chopped fresh chives

Heirloom tomatoes- about 2 or 3 depending on your size

Olive oil

Flaky sea salt

Instructions

First thing you want to do is toast your bread until a slight golden brown 

Once toasted, take the garlic clove and cut a small slice off the end. Rub the garlic clove all over the toasted bread. It will melt into the bread and the heat will slightly cook it

In a small bowl combine the ricotta, salt, pepper, lemon zest, and all herbs until combined. Spread all over the toast

With a serrated knife cut the tomatoes into thick slices and arrange on the top of the toast

Drizzle the top with olive oil, a good sprinkle of flaky sea salt, and a crack of black pepper. You won’t even believe how amazing this is!!
