Antipasto Sandwich

One of my favorite things ever is an antipasto platter- I’m slightly obsessed with it. I love the combination of the savory meats, vinegary vegetables, and creamy cheese. Come to find out putting all of those ingredients together makes the best sandwich ever!

Ingredients

1 ciabatta loaf

2 1/2 tablespoons pesto

14 thin slices Salami

14 slices prosciutto

4 slices provolone

Fresh mozzarella, sliced thin

Roasted red peppers, cut into strips

Marinated quarter artichokes

Fresh arugula

2 teaspoons balsamic vinegar

Instructions

Slice the ciabatta loaf in half and remove some of the bread inside on one side

To one side of the bread spread the pesto to cover

On top to the pesto add the sliced salami, prosciutto, provolone, roasted red peppers, artichokes, and arugula Drizzle the untouched bread with balsamic and put on the top of the sandwich, pressing down

Cut into quarters (or as many as you’d like) and serve! Yum!
