Bailey’s Cheesecake Swirl Brownies

I’ve always loved St. Patricks Day. The green, the fun- and the Bailey’s! This year I decided to use my favorite Bailey’s Irish cream and make the best ever cheesecake swirl brownies. This easy to make recipe is SO delicious you won’t even believe it. Perfect for St. Patrick’s Day or any day of the year. They’re decant, chocolatey, and have the perfect amount of cheesecake swirl.

Cheesecake Sirl:

8 oz cream cheese, room temperature

1/3 cup sugar

1 large egg yolk

1/4 teaspoon vanilla extract

2 tablespoons Bailey’s Irish Cream

2 tablespoons all purpose flour

Brownie Batter:

5 tablespoons unsalted butter

4 ounces bittersweet chocolate

2 large eggs

1/2 cup sugar

1/2 cup light brown sugar

1 teaspoon vanilla extract

1/4 cup Bailey’s Irish Cream

1/4 teaspoon salt

3/4 cup all purpose flour

2 tablespoons natural unsweetened cocoa powder

Instructions

Preheat your oven to 350 degrees F and spray an 8×8 pan

In a bowl with an electric mixer mix together the cream cheese and sugar until smooth

Add in the egg yolk, Bailey’s, and flour. Mix until combined and set aside

In a small pan melt the butter. Once the butter is melted turn off the heat and add in the bittersweet chocolate. Let it sit at least a minute or two

In a bowl mix together the eggs, sugar, light brown sugar, vanilla extract, Bailey’s, and melted chocolate.

Add in the salt, flour, and cocoa powder and mix until combined

Pour 3/4 of the brownie batter into the prepared pan

Spoon the bailey’s cream cheese mixture over the top of the brownie mixture

Spoon the remaining brownie batter over the top of the cream cheese mixture

Using a sharp knife swirl the mixture together but make sure to not completely mix everything!

Put into the preheated oven and bake 40-45 minutes until completely cooked through

Once cooked let it cool slightly before cutting and serving. THE BEST!
