Baked Eggs in Avocado

Looking for a quick, easy, healthy, and super delicious breakfast? Look no further! I love making these because you can make one just for your self or for 30 people. I add some spicy toppings to make it even more interesting.

Ingredients

  • 1 avocado
  • 2 eggs
  • 1 lime
  • salt
  • pepper
  • small diced chorizo
  • chopped fresh cilantro
  • chopped fresh jalapeño
  • hot sauce of choice

Instructions

  1. The first thing you want to do is preheat the oven to 425 degrees F
  2. With your knife carefully cut the avocado in half lengthwise. Twist it to come apart. I like to take my knife and give the pit in the middle a firm chop so it sticks in there. Once the knife is stuck in the pit twist off the avocado and it should come off easily! Watch the video if this doesn’t make sense
  3. With a spoon scoop out some of the avocado so you can make enough room for the egg
  4. Add the avocado to a sheet tray and add to the diced chorizo to the middle. Give the avocado a good squeeze of fresh lime juice and season with salt and pepper
  5. Carefully and slowly crack and egg into the hole. Don’t worry… some of the egg whites will spill over. If your avocado is a little wonky and won’t sit up right try having a side of it rest on the side of the sheet tray for stability
  6. Once the avocados are filled with the eggs put them into the oven and let them bake for 12-15 minutes or until the egg whites look set
  7. Take them out and top with the cilantro, jalapeño, a little more lime juice, and even some hot sauce if you’d like
  8. That’s it! A very healthy and tasty breakfast. Yum!
