Baked Spinach & Ricotta Eggs

This easy to make breakfast is the PERFECT mother’s day surprise! It’s delicious, rustic, beautiful, and the best way to start the day! There’s nothing better than showing someone you love them by cooking for them, especially for someone who has done so much for you. Happy Mothers Day to all you beautiful mothers out there.

Ingredients

Scale
  • 1/4 cup ricotta
  • 1 clove garlic, grated
  • 1/2 teaspoon grated lemon zest
  • 2 sprigs fresh thyme, leaves removed
  • 1/2 cup baby spinach, torn by hand
  • 2 eggs
  • salt
  • pepper
  • Crusty bread for serving

Instructions

  1. Preheat oven to 350 degrees F
  2. In a small bowl mix together the ricotta, garlic, lemon zest, thyme leaves, salt, and pepper until combined
  3. Add the torn spinach and mix together
  4. Add the mixture to an individual ramekin and create two divots where the eggs will go
  5. Carefully crack the eggs on the top, sprinkle with salt and pepper, and put into the oven
  6. Let it bake for 14-16 minutes or until the whites are set
  7. Once cooked serve with crusty bread. That’s it! An easy and extremely impressive breakfast that everyone will love.
