BBQ Chicken Salad

Summer to me means barbecue anything. I especially LOVE barbecue chicken! This salad takes all of my favorite Summer flavors and combines them with barbecue chicken and a lightened up Greek yogurt ranch sauce. So easy- so delicious- so satisfying! You have a weeknight meal in less than 10 minutes. What more could you want?

Ingredients

1/2 cup shredded cooked chicken (I use leftover rotisserie!)

2 tablespoons BBQ sauce of your choice

1 head of romaine

1 ear corn

Cherry tomatoes, cut in half

1/2 avocado sliced

2 tablespoons chopped fresh cilantro

1/4 cup shredded cheddar

Thinly sliced red onion

1/4 cup black beans rinsed and dried

Ranch Dressing:

1/4 cup Greek yogurt

1 teaspoon champagne vinegar

1 teaspoon milk

2 teaspoons lemon juice

3 tablespoons chopped fresh dill

Salt

Pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Instructions

In a pan over high heat add a little oil and let the corn char slightly on all sides. Make sure to turn often. While the corn is cooking prepare everything else

In a small bowl combine the shredded cooked chicken and BBQ sauce. Set aside

Tear by hand a romaine head and add to a bowl

To the lettuce add the tomatoes, black beans, avocado slices, chopped fresh cilantro, shredded cheddar, thinly sliced red onion, and black beans

Once the corn is cooked cut the kernels off too the cob and add it to the salad along with the BBQ chicken

Now it’s time to make the ranch! In a small bowl add the Greek yogurt, champagne vinegar, milk, lemon juice, chopped dill, salt, pepper, onion powder, and garlic powder. Stir to combine and drizzle over the top of your DELICIOUS salad. Yum.
