Blueberry Pie Overnight Oats

All of the delicious flavors of a blueberry pie in a healthy breakfast option?! Now thats something to get out of bed for.

Ingredients

  • 1/3 cup rolled oats
  • 1/3 cup milk (or any nut milk you’d like)
  • 1/3 cup plain Greek yogurt
  • 1 teaspoon maple syrup
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Walnuts for topping

Blueberry Topping

  • 1 cup blueberries
  • 1 teaspoon sugar
  • 1 teaspoon water

Instructions

  1. In a jar or bowl mix together the oats, milk, yogurt, maple syrup, cinnamon, and vanilla extract
  2. Stir to combine and let it sit in the refrigerator for a few hours or overnight
  3. In the meantime, in a small pan over medium high heat add the blueberries, water, and sugar
  4. Let them cook until the blueberries burst and a delicious jam form, about 5-7 minutes
  5. Turn off the blueberry mixture and let it come to room temperature
  6. To serve, add a good scoop of the blueberry mixture and some chopped walnuts to the top of the overnight oats and serve! A delicious and hearty breakfast that will be your new favorite
