Carrot Cake Bars with Cream Cheese Swirl

What better way to make you extra hoppy this Easter (and make you forget everything that is going on) than by making these amazing carrot cake bars! This easy recipe has all those delicious flavors of a regular carrot cake but with the cream cheese swirled in it. Every bunny will love you for making these. Trust me.

Ingredients

1 cup flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1 cup sugar

2 eggs

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 1/2 cups freshly grated carrot

8 oz cream cheese, room temperature

1/3 cup sugar

1 egg

1 teaspoon vanilla extract

1/4 teaspoon lemon zest

Instructions

Preheat your oven to 350 degrees F and grease a 9×9 pan

In a bowl mix together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until combined

In another bowl mix together the sugar, vegetable oil, eggs, and vanilla extract. Mix until combined

Add the dry ingredients to the wet and combine. Add in the grated carrot and mix together. Pour into the greased pan

In another bowl combine the softened cream cheese, egg, sugar, vanilla extract, and lemon zest. Once mixed together add dollops of the cream cheese mixture to  the carrot cake. Using the tip of a knife swirl everything around. You don’t want to completely combine the two, just swirl!

 Put into the preheated oven. Bake 30 minutes, or until a toothpick inserted into the middle comes out clean

Let it cook slightly before cutting and devouring!
