Chicken Orzo Soup with Turmeric and Ginger

This incredibly flavorful chicken soup will blow you away! It’s packed with flavor from the ginger, turmeric and fresh lemon juice. This immune boosting soup will help keep any sniffles away- and do it in the most delicious way possible.

Ingredients

Scale

1 onion, diced

3 carrots, sliced

4 cloves garlic, minced

Zest from 1 lemon

1/2 teaspoon fresh grated ginger

1 teaspoon turmeric

8 cups chicken stock

1 13 oz can full fat coconut milk

3/4 cup orzo pasta

3 cups shredded chicken ( I use rotisserie chicken)

Grapeseed Oil

1 8.5 oz can artichokes, chopped

1 6 oz bag baby spinach

Juice of 3 lemons

Salt

Pepper

Parmesan for serving

Instructions

In a heavy bottom pot over medium high heat add the grapeseed oil and let it heat up

To the pot add in the onions and carrots with a pinch of salt. Let them cook until the onions are translucent, about 3-4 minutes

Once cooked add the minced garlic, grated ginger, lemon zest, and turmeric. Cook until fragrant, about 1 minute

To the pot add in the chicken stock and coconut milk. Stir to combine and let it come to a boil

Once it comes to a boil add in the orzo pasta and cook for 10 minutes

After the 10 minutes turn the heat to medium low. Add in the chicken, spinach, chopped artichokes, lemon juice, salt, and pepper. Let it cook another few minutes

To serve- ladle into a bowl and top with Parmesan.  YUM
