Spinach & Citrus Salad

This citrusy salad is perfect for Summer. It’s packed with flavor coming from the spinach, citrus, goat cheese, and avocado. Another great thing about this salad is that you won’t feel guilty eating all of it!

Ingredients

Spinach
1 grapefruit
1 orange
1 avocado
2 ounces goat cheese
1/2 small red onion, sliced

Vinaigrette

1/4 cup citrus juice
1 teaspoon honey
1 teaspoon dijon mustard
1/4 cup olive oil
salt
pepper

Instructions

In a salad bowl add the spinach, sliced avocado, sliced red onion, and goat cheese
On a cutting board with a sharp knife cut the top and bottom off of the grapefruit and orange
Set it upright and carefully using your knife cut down, following the natural curve of the citrus, and cutting off all of the white pith
Put the citrus in your hand and over a bowl and using the knife carefully cut on either side of the white segments
Add the citrus segments to the salad and once you have cut all of the citrus give the remaining leftover piece a big squeeze, getting all of the juice out
Using the extra grapefruit and orange juice you squeezed out add Dijon mustard, honey, salt, pepper and give it a stir to combine
While whisking slowly add in the oil and add the vinaigrette to the salad, give it a big toss, and serve!
