Coconut Crack Bars

These Almond Joy tasting treats are easy to make and will satisfy ANY sweet tooth that you have! Best part of all… they’re not bad for you!! That means you can eat at least 10 of them. Right? This crack is not whack.

Ingredients

1 1/2 cups shredded unsweetened coconut
1/4 cup melted coconut oil
2 tablespoons maple syrup
1/4 teaspoon vanilla extract
1 teaspoon coconut oil
2 cups dark chocolate chips
Chopped almonds

Instructions

In a bowl combine the shredded coconut, melted coconut oil, maple syrup, and vanilla extract until combined
In a small pan lined with parchment paper add the coconut mixture. The smaller the pan you use (like a loaf pan) the thicker your bars will be
Using the back of a spatula press down firmly
Put them into the freezer to let them set up for about 15 minutes
While they’re freezing melt your chocolate. In a microwave safe bowl add the chocolate chips and coconut oil. Microwave for thirty seconds, give it a stir, and then microwave on 15 second intervals stirring in between until completely melted
Take the coconut bars out of the freezer, cutting into squares
Dip the bottom of the squares into the melted chocolate and place them on a new sheet of parchment paper
Once they’ve all been dipped take the remaining chocolate and liberally drizzle it over the top
Sprinkle the top with almonds and put them back into the freezer to set up another 5 minutes before eating
They’re best if stored in the freezer (if you don’t eat them all at once)
