Healthy Banana and Dark Chocolate Bread

I don’t know about you but I always seem to go a little bananas (hehe) at the store when buying bananas and seem to ALWAYS end up having a plethora over overripe bananas. Since it’s still the beginning of the year and I’m on a health kick I decided to use them up by making a healthy version of one of my favorite things ever- banana bread.

Ingredients

3 very ripe bananas
1/4 cup maple syrup
1/4 coconut oil, melted
2 eggs
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup dark chocolate chips

Instructions

Preheat your oven to 350 degrees F
In a bowl mash your ripe bananas with a fork
To the bananas add the maple syrup, melted coconut oil, eggs, and vanilla. Whisk until combined
To that add in the whole wheat flour, baking powder, salt, and cinnamon. Stir until just combined
Fold in the dark chocolate chips and pour into a greased loaf pan. You can add sliced bananas or more dark chocolate on the top if you’d like!
Bake until a tester comes out clean, about 30 minutes
Let it cool slightly before taking out of the pan. Slice, serve, and that’s it! You’ll go bananas over this recipe! (See what I did there?)
