Healthy Breakfast Pumpkin Cookies

Not very often do you hear the words healthy and cookie in the same sentence. This is the exception though! These DELICIOUS Fall inspired breakfast cookies are made with whole oats, pumpkin, Fall spices, almond butter, and other delicious ingredients. You won’t believe how easy, healthy, and flavorful these are.

Ingredients

3 cups old fashioned rolled oats

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon salt

1/3 cup cranberries

1/3 cup dark chocolate chips

1/4 teaspoon ground nutmeg

1/8 teaspoon ground cloves

1 1/3 cup pumpkin puree

1/3 cup almond butter

2 teaspoons maple syrup

2 tablespoons coconut oil

1 teaspoon vanilla extract

1 egg

Instructions

Preheat your oven to 375 degrees F

In a pan over medium heat add in the pumpkin puree, coconut oil, almond butter, vanilla extract, and maple syrup. Cook until the almond butter and coconut oil melt

While the wet ingredients are cooking add the rolled oats into a large bowl. To the bowl add in all of the spices, the dried cranberries, and dark chocolate chips. Stir to combine

Once the wet ingredients are melted and mixed together (only takes 30 seconds or so) add them to the bowl with the oats along with an egg

Stir to combine everything and let the mixture sit for 5 minutes

After 5 minutes scoop out the dough using a 1/4 cup measuring cup or ice cream scoop. With damp hands gently press the mixture into 3 inch rounds that are about 1/2 inch thick. Don’t worry about spacing out the cookies- they won’t spread while baking!

Put the cookies into the preheated oven and bake for 25 minutes. Let cool slightly before serving. Perfect on the go breakfast or snack!
