Homemade Zesty Dill Pickles

I LOVE a good pickle- especially if there’s a lot of flavor and zest! These homemade pickles are seriously the best ever and so easy to make. They’re the perfect way to use all of my cucumber growing in the garden!

Ingredients

Scale

2 cups water

1 1/2 cups organic vinegar

1 tablespoon + 1 teaspoon pickling salt

1 tablespoon + 2 teaspoon sugar

2 cucumbers, ends slightly trimmed, and cut however you’d like

Spice amount for each jar:

1/2 teaspoon mustard seeds

1/4 teaspoon multi color peppercorns

1/4 teaspoons coriander seeds

1/4 teaspoon red pepper flakes

2 bay leaves

2 cloves garlic, smashed

Fresh dill

Instructions

In a pot bring the water, vinegar, salt, and sugar to a simmer

Add the cut cucumbers to a washed and dried mason jar. You want them packed but not too stuffed!

In each jar that you are making add the mustard seeds, peppercorns, coriander, red pepper flakes, bay leaves, and smashed garlic

Carefully pour the hot liquid into the jars, leaving about a 1/4 inch free at the top

Put on the lid and put into your cabinet to let the pickles sit for 7-10 days. The longer they sit the better! That’s it! The best homemade pickles ever!
