Mango & Coconut Chia Seed Pudding

Looking for an insanely delicious vegan, gluten free dessert?! Look no further. This Summer inspired dessert recipe is so amazing you won’t be able to stop eating it. Trust me. It’s the perfect Summer dessert- you don’t have to worry about it messing up that beach bod by eating it!

Ingredients

2 large mangoes

2 cups full fat coconut milk

1/2 cup chia seeds

1 teaspoon vanilla extract

1 tablespoon maple syrup

Instructions

In a food processor or blender add one of the peeled and diced mangoes. Puree until smooth and add into a large bowl

To the bowl add the other peeled and diced mango 

To the mango add in the coconut milk, chia seeds, vanilla extract, and maple syrup

Stir to combine completely and put into the refrigerator. Let it sit for about 15 minutes, take it out and give it a good stir, and then put back into the fridge

Let it sit another hour before scooping it into little cups and topping with more fresh mango, hazelnuts (if you want), or coconut flakes! YUM
