Mint Chocolate Chip Baked Doughnuts

What better way to start off a festive and fun St Patrick’s Day than with doughnuts! These easy to make baked doughnuts are loaded with mint chocolate flavor and will be your new favorite breakfast! They’re the perfect St Patrick’s Day breakfast recipe (or any time of the year)!

Ingredients

Doughnuts:

2 cups all purpose flour

3/4 cup sugar

2 teaspoon baking powder

1/2 teaspoon salt

3/4 cup whole milk

2 eggs

2 tablespoons melted butter

1 teaspoon mint extract

24 drops green food coloring

1 cup mini chocolate chips

Ganache Glaze:

1 cup semi sweet chocolate chips

1/2 cup heavy whipping cream

1 tablespoon butter

Mini chocolate chips

Instructions

Preheat your oven to 350 degrees F and spray a 6 cavity doughnut pan with baking spray

In a bowl combine the flour, sugar, baking powder, and salt 

In another bowl whisk together the milk, butter, eggs, and mint extract

Add a few drops ( a little goes a long way! ) of the green food coloring until your desired color

Pour the wet ingredients into the dry and mix until just combined. Fold in the mini chocolate chips

Spoon the dough into the prepared pan 3/4 of the way 

Bake the doughnuts 10-12 minutes. This recipe makes 2 pans

Once cooked let them cool while you make the ganache

Heat up your heavy whipping cream until you see small bubbles around the outsides

Pour the hot cream into a bowl with the chocolate chips and butter. Let it sit a minute before stirring. The chocolate should be completely melted

Dip the top half of the doughnuts into the ganache and let the excess drip off. Sprinkle the tops with more mini chocolate chips for a festive and fun treat!
