Berries, Almond and Mango Salad

Who doesn’t love a salad with Summer fruit. Take advantage of the seasons bounty with this easy and fresh salad. Your taste buds will thank you!

Ingredients

Scale
  • 3 cups spinach
  • 3 fresh strawberries
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh mango, diced
  • 1/4 cup whole raw almonds, chopped
  • 1/4 cup feta, crumbled

Vinaigrette

  • 1/2 lemon, juiced
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon honey
  • 1 teaspoon Dijon Mustard
  • salt
  • pepper
  • 1/4 cup grapeseed oil

Instructions

  1. In a bowl add the spinach
  2. To the top of the spinach add the strawberries, blueberries, mango, almonds, and feta cheese (or any other fresh fruit you’d like!)
  3. In a small bowl add the lemon juice, grated ginger, dijon mustard, honey, and sprinkle of salt and pepper
  4. Whisk together until the honey dissolves
  5. While whisking, slowly add in the oil until combined. Pour over the salad, toss, and serve!
