Rosemary Smashed Potatoes

This side dish requires minimal ingredients and is one of the tastiest! It’s a great side dish for a large dinner group because you can make it ahead of time and cook it when it’s time to serve. Everyone will love it!

Ingredients

Scale

1 pound baby potatoes (I like the red ones!)
Garlic
Rosemary
Olive oil
Red Pepper
Salt
Pepper

Instructions

In a large stock pot filled with water, bring it to a boil and liberally salt the water. Add in the potatoes and boil about 15 minutes, or until fork tender
While those are cooking preheat your oven to 450 degrees F
Once cooked drain the potatoes and place on a sheet tray
Using a fork or potato smasher, lightly press down the potatoes until smashed but still intact
Grate some garlic over the top of each potato, add chopped fresh rosemary, salt, pepper, and red pepper flakes
Drizzle the top lightly with olive oil and put them into the preheated oven
Let them cook for another 15-17 minutes until crispy on the top
