This Spring inspired salad is fresh, vibrant, and BEAUTIFUL! It’s easy to make and just looking at it will make anyone want to eat a salad. Time to put down the heavy Winter food and start eating healthy again!

Ingredients

Salad

Bibb lettuce
1 radish, sliced
3 stalks asparagus, chopped
45 cherry tomatoes, halved
1/2 avocado, sliced
1 teaspoon shelled pistachios
1 oz goat cheese, crumbled
Edible flowers (optional)

Vinaigrette

Juice from 1/2 lemon
1/2 teaspoon Dijon mustard
2 tablespoons Grapeseed oil (or mild tasting oil of choice)
salt
pepper

Instructions

In a bowl tear the Bibb lettuce by hand
Add the sliced radish, raw chopped asparagus, cherry tomatoes, sliced avocado, pistachios, and goat cheese
In a small bowl whisk together the lemon juice, Dijon mustard, Grapeseed oil, salt, and pepper until emulsified
Pour over the salad right before it’s time to serve, and eat! I like to top it with edible fresh spring flowers to make this already beautiful salad extra beautiful. Enjoy!
