Thai Style Sweet Potato Soup

This easy and flavorful soup will become your go-to recipe! It’s packed with flavor and insanely delicious for only needing a few ingredients. You can whip this up in no time and it will be sure to be a crowd pleaser. Perfect soup to warm you up on a cold Winter day!

Ingredients

Olive oil
1 inch piece of ginger, peeled and diced
3 cloves garlic, minced
3 tablespoons red curry paste
4 medium sized sweet potatoes, cooked and peeled
4 cups chicken broth
1 can full fat coconut milk
Zest & juice of 2 large limes
1 teaspoon sugar
salt
pepper
Shredded unsweetened coconut flakes
Chopped fresh cilantro

Instructions

In a large pot heat up the olive oil over medium high heat
Add the chopped ginger and minced garlic, cooking until fragrant, about 30 seconds
Add the red curry paste and let it cook another minute
Add the cooked sweet potato and chicken broth and let it cook for another 10-12 minutes
Once cooked turn off the heat and ladle the soup into a blender. Carefully blend until smooth for 30 seconds
Turn the pot on over medium low heat and add the pureed soup in it. To the soup add the coconut milk, lime zest, lime juice, sugar, salt, and pepper and cook for another minute or two
Now it’s time to serve! To the top of the soup I like to add chopped fresh cilantro and unsweetened shredded coconut. That’s it! A delicious and quick soup that will tickle your taste buds. Enjoy!
