White Chicken Chili

As soon as there is a slight chill in the air (here in Florida those days are hard to come by) you can bet money there will be chili for dinner in my house. I get soo excited to make it! Every once in a while I like to switch it up from the traditional beef and tomato base chili with a white chicken chili! This recipe has SO much flavor and its the perfect cold weather dinner recipe.

Ingredients

Olive oil

2 yellow onions, diced

2 jalapenos, seeds and ribs removed, diced

2 poblano peppers, seeds and ribs removed, diced

2 long hot (or Anaheim) peppers, seeds and ribs removed, diced

1 tablespoon ground cumin

1 1/2 teaspoons chili powder

3/4 teaspoon smoked paprika

1/2 teaspoon cayenne

Salt

Pepper

6 garlic cloves, minced

2 tablespoon all purpose flour

5 cups chicken stock

45 oz (315 oz can cannelini beans) drained and rinsed

3 cups cooked chicken

Juice from 1 lime

Garnishes:

Sour cream

Shredded cheddar cheese

Chopped fresh cilantro

Sliced scallions

Instructions

In a heavy bottom pot or dutch oven heat up your oil over medium high heat

Add in the chopped onions, chopped peppers, a big pinch of salt, ground cumin, chili powder, paprika, and cayenne. Stir to combine and saute for about 3-5 minutes until the onions are cooked through

To the pot add in the minced garlic and cook until fragrant, about 10-15 seconds

Add in the flour and stir to coat the vegetables. Let the mixture cook, stirring often, for about 2 minutes

Add in the chicken stock and 1 can of canellini beans. With a potato masher mash the cannelini beans so no large pieces remain. This helps to give the chili a rich, thick consistency!

Add in the rest of the cannelini beans as well as the cooked chicken (I love using rotisserie chicken!), fresh lime juice, and another big pinch of salt and pepper

Turn the heat to medium and let the chili cook for about 20 minutes

To serve, ladle the chili into a bowl and add a dollop of sour cream, shredded cheddar cheese, chopped fresh cilantro, sliced scallions, and another big squeeze of fresh lime! Talk about a winner.
