Winter Citrus, Beet & Fennel Salad

New Year, new healthy recipes to start the year off right! I don’t know about you but I’ve been overeating this entire holiday season and I’m ready to eat healthy again! This delicious and fresh recipe is the perfect way to start the new year. it’s packed with flavor, easy, and healthy!

Ingredients

Scale

1 grapefruit, segmented (watch video!)

1 orange, segmented

1 small cooked and peeled beet (you can buy them already cooked in your produce section!)

1/4 fennel, thinly sliced

1 oz goat cheese

1 tablespoon fennel leaves

1 tablespoon pomegranate seeds

Vinaigrette:

2 tablespoons citrus juice leftover

1/2 teaspoon Dijon mustard

2 teaspoon grapeseed oil

salt

pepper

Instructions

The first thing you want to do is segment the citrus. Cut the top and bottom of the citrus so the flesh is exposed. Set it upright. Using a sharp knife and following the natural curve of the citrus, cut off the peel and white pith

Taking the citrus in your hand and over a bowl, carefully cut on either side of the white segments. Set the segments aside and give the citrus a big squeeze to trap those delicious juices in a bowl. Watch the video for more help!

On a plate add the citrus segments

Cut an already cooked beet and add those to the plate

Take the fennel and cut off the tops. Cut the fennel in half and then half again. Cut out the core and thinly slice the fennel. Add it to the plate with the citrus and beets along with little fennel leaves 

Add the pomegranate seeds and crumble some goat cheese as well

Make the vinaigrette in a small bowl by mixing together the citrus juice, dijon mustard, salt, and pepper. Slowly drizzle in the grapeseed oil and dress your salad with as much as the dressing as you’d like
