Apple Crumb Muffins

It’s officially Fall and that means it’s acceptable to have apple EVERYTHING! Kick your first weekend of Fall off right right my super easy but very delicious Apple Crumb Muffins! They taste like Fall in a muffin. Bring on the comfy warm clothes!

Muffins

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup full fat plain Greek yogurt
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped, peeled apples

Crumb Topping

  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons all purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon cold butter, cut into cubes

Instructions

  1. The first thing you want to do is preheat your oven to 400 degrees F. Grease your muffin tin and set aside
  2. In a large bowl combine the dry ingredients: all purpose flour, whole wheat flour, sugar, cinnamon, and salt. Set aside
  3. In another bowl mix together the eggs, Greek yogurt, melted butter, and vanilla
  4. Stir the wet mixture into the dry ingredients just until combined. Fold in the apple chunks
  5. Fill the muffin tin cups ( I like using the jumbo muffin tins! ) about 2/3 the way full and set aside to make the topping
  6. In a small bowl combine the sugar, flour, and cinnamon. Cut in the butter until the mixture resembles coarse crumbs. I like doing it with my fingers but you can use a fork too
  7. Sprinkle about a teaspoon or a little more over the top of the muffin mixture
  8. Bake the muffins at 400 for 17-20 minutes or until a toothpick comes out clean from the center. I do the jumbo muffins so they take about 20 minutes
  9. Let them cool slightly before serving
  10. That’s it! A delicious Fall breakfast in no time at all
