Banana, Blueberry & Coconut Baked Oatmeal

My favorite meal of the day is breakfast. It gives me energy to get through the day feeling good! I always eat a healthy breakfast but sometimes I get sick of the same old same old. This SUPER easy baked oatmeal is the perfect make ahead healthy breakfast that will get you through! Plus, it’s so yummy it could double as a healthy dessert.

Ingredients

Scale

3 cups rolled oats

1 cup mashed banana

2 eggs

1 cup milk

1 teaspoon vanilla extract

1 tablespoon maple syrup

1/2 cup frozen blueberries

1/2 cup shredded unsweetened coconut flakes

Instructions

Preheat your oven to 350 degrees F

In a bowl combine all of the ingredients until completely mixed

Pour into a parchment paper lined square baking pan and spread evenly

Put into the preheated oven to bake for 30 minutes

Once cooked, let it cool for about 20-30 minutes before slicing! How easy is that?
