Baked Pumpkin Doughnuts

These delicious Fall inspired pumpkin doughnuts are so easy to make you’ll be wanting to make them every weekend! WARNING: it’s impossible to only have one… but that’s ok because they’re baked which means less calories! Right?

Doughnuts

  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 egg
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1 1/2 teaspoon vanilla extract
  • 3/4 cup pumpkin puree

Maple Glaze

  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup (maybe more) Maple syrup

Instructions

  1. The first thing you want to do is preheat your oven to 350 degrees F
  2. In a large bowl add all of the dry ingredients: all purpose flour, whole wheat flour, salt, baking powder, cinnamon, and nutmeg. Mix to combine
  3. In another bowl whisk together the egg, vegetable oil, milk, brown sugar, vanilla extract, and pumpkin puree until smooth
  4. Add the wet ingredients to the dry and stir to combine. Make sure you don’t over mix!
  5. Lightly grease your doughnut pan and fill the molds with the dough
  6. Put them into your preheat oven and bake for 12-14 minutes
  7. Once they’re cooked turn them out and let them cool slightly before you put the glaze on
  8. In a small bowl add the powdered sugar and cinnamon. Slowly add the maple syrup while mixing, adding one tablespoon at a time making sure the consistency isn’t too runny. If if seems very runny add a little more powdered sugar
  9. Dip the doughnuts into the glaze, shake off the excess, and devour while warm
  10. That’s it! A delicious Fall treat made in minutes. Enjoy!
