Banana Chia Seed Pudding

Ever get bored eating the same breakfast everyday but don’t want to spend a lot of time in the morning cooking? Same. This yummy and healthy breakfast is the perfect thing to wake up to! Best part- you can make it the night before. Now you don’t have an excuse to not eat breakfast anymore.

Ingredients

Scale

1 ripe banana

1/2 cup coconut milk

1/2 cup milk (or almond milk)

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1 teaspoon cinnamon

1 tablespoon maple syrup

Toppings:

Sliced bananas

Unsweetened shredded coconut

Instructions

In a bowl smash the banana until not chunky

To the smashed banana add the coconut milk, regular milk, chia seeds, vanilla extract, cinnamon, and maple syrup. Mix until combined 

Cover the pudding and put into the refrigerator to let it sit for at least 2 hours or overnight

When you’re ready to eat add some sliced bananas and unsweetened coconut to the top and enjoy!
